- Pre-heat a large, non-stick skillet over medium heat. Grill the 4 slices of pineapple for about 5 minutes until brown on each side. Set aside. Butter one side of each slice of bread and set aside.
- Place 2 slices of cheese on the non-buttered side of 4 slices of bread (8 slices). Place 4 halves of bacon over cheese(8slices). Place 1 slice of pineapple over bacon. Place one slice of cheese over pineapple. Place remaining slices of bread buttered side up over cheese. You will have 4 assembled sandwiches.
- Place sandwiches on hot griddle. Grill for 2-3 minutes or until golden brown. Flip sandwiches using a non-metal spatula. Grill an additional 2-3 minutes or until golden brown and cheese is melted. Transfer sandwiches to a cutting board and cut in half. Serve
